The ideal candidate will promote innovation in Japanese cuisine while maintaining brand consistency and the highest standards of culinary quality. They will also be responsible for guiding the onboard sushi team and ensuring compliance with sanitation and safety standards at sea.

  • Location:

    Onboard and at Headquarters (travel to all vessels required) We offer support for U.S. visas, so applications from Japan are also welcome! ■ Menu Development and Innovation

  • Develop and standardize sushi and Japanese cuisine menus across all vessels (including seasonal updates and reflection of brand policies).
  • Enhance dishes by introducing high-quality ingredients and contemporary techniques. ■ Operations Supervision
  • Conduct audits by visiting each ship, provide training to sushi chefs, and support operations.
  • Collaborate with corporate culinary and procurement teams to conduct quality control and optimize procurement processes. ■ Training and Human Resource Development
  • Create and implement continuous training programs on knife skills, sanitation management, presentation, traditional techniques, etc.
  • Support onboarding of new sushi chefs and in-house promotions. ■ Quality Assurance and Compliance
  • Ensure brand consistency and high-quality execution in all sushi outlets.
  • Enforce HACCP and food safety regulations on cruise lines (including handling and storage of raw fish, preventing cross-contamination, etc.).
  • Over 10 years of experience in the sushi and Japanese cuisine field, with at least 3 years in a leadership or multi-location supervisory role.
  • Practical experience in luxury and high-volume environments such as cruise lines, high-end resorts, or upscale restaurants.
  • Deep knowledge of both traditional and modern sushi techniques.
  • Strong understanding of raw fish hygiene management and experience in adhering to food safety standards.
  • Excellent leadership abilities, communication skills, and teaching aptitude.
  • Ability to frequently travel and stay onboard ships.
  • Certificate from an accredited sushi or Japanese cuisine culinary school.
  • Multilingual skills.
  • Work experience in the cruise line or international hospitality industry. ■ Leadership and Team Building
  • Act as a mentor and leader to the onboard sushi team, providing coaching and support for career growth.
  • Collaborate with each ship’s executive chef to integrate sushi menus into the overall culinary plan.
