You will be responsible for maintaining brand consistency, ensuring the highest standards of culinary quality, driving innovation in Japanese cuisine, and leading the sushi team while ensuring compliance with safety and hygiene standards onboard

Key Responsibilities:
Menu Development & Innovation:

Develop and standardize sushi and Japanese cuisine menus across the fleet (including seasonal updates and brand alignment). Introduce high-quality ingredients and modern techniques to enhance the dishes.

Operational Oversight:

Conduct audits and support operations by visiting ships, providing training to sushi chefs, and assisting with operational management. Collaborate with the corporate culinary and procurement teams to optimize quality control and sourcing.

Training & Talent Development:

Develop and implement continuous training programs for knife skills, hygiene management, presentation, and traditional techniques. Support onboarding of new sushi chefs and facilitate internal promotions.

Quality Assurance & Compliance:

Ensure brand consistency and high-quality execution at all sushi outlets. Strictly adhere to HACCP and cruise line food safety regulations (handling, storage, and preventing cross-contamination of raw fish).

Leadership & Team Building:

Mentor and lead the sushi team onboard, supporting career growth. Work with Executive Chefs on each ship to integrate the sushi menu into the overall culinary plan.

Qualifications:

Over 10 years of experience in sushi and Japanese cuisine, with at least 3 years in a leadership role overseeing multiple locations. Experience working in luxury, high-volume environments like cruise lines, high-end resorts, or fine dining restaurants. Deep knowledge of traditional and modern sushi techniques. Strong understanding of raw fish hygiene and experience with food safety regulations. Excellent leadership, communication, and coaching skills. Ability to travel frequently and stay onboard for extended periods.

Preferred Qualifications:

Certification from a recognized sushi or Japanese culinary school. Multilingual skills. Experience working with cruise lines or in international hospitality settings.
