We are seeking a talented Head Sushi Chef to lead our sushi program and bring a world-class experience to our Miami guests. Position Summary The Head Sushi Chef at Amazónico Miami is responsible for leading the sushi kitchen and team, ensuring exceptional quality, consistency, and innovation. This individual will be a master in sushi preparation including sashimi cuts, nigiri, maki rolls, and omakase platters. The ideal candidate has extensive experience in high-end, high-volume restaurants, possesses expert knife skills, and thrives in a fast-paced, team-oriented environment. You will be leading a team of 9 sushi chefs and play a key role in training, development, inventory control, and maintaining the highest culinary and hygiene standards. Amazonico Responsibilities Ensure the smooth and efficient operation of the sushi kitchen in line with Amazónico’s global standards. Maintain precision and consistency in all sushi preparations, including adherence to standardized recipes. Arrive on time for scheduled shifts and follow all attendance procedures. Uphold high standards of grooming, uniform, and personal hygiene. Attend all required meetings and training sessions. Be a flexible, supportive team player to ensure overall kitchen efficiency. Have full knowledge of the Amazónico food and dessert menus. Treat company equipment and property with care. Maintain the highest levels of cleanliness and hygiene in accordance with Florida Health & Safety Regulations. Understand and follow emergency procedures including fire and evacuation policies. Departmental Responsibilities Oversee mise en place and service preparation to ensure uninterrupted and consistent food quality. Maintain tight control over portion sizes and minimize waste to protect profit margins. Follow cleaning checklists and ensure the sushi station is organized, sanitized, and ready at all times. Collaborate across departments and support other areas or locations as needed. Maintain consistent communication with BOH and FOH to ensure seamless guest service. Role Responsibilities Prepare all sushi dishes in line with Amazónico’s presentation and quality standards. Lead, train, and manage a team of 9 sushi chefs and kitchen porters. Provide ongoing coaching and feedback to develop team members’ skills and performance. Handle seafood with expert precision, including whole fish butchery and specialty cuts. Design, develop, and implement new menu items, omakase specials, and seasonal offerings. Manage stock rotation, ordering, and weekly inventory with accurate reporting. Prepare daily and weekly reports and communicate key updates to senior leadership. Maintain guest satisfaction by responding quickly and professionally to complaints or issues. Oversee staff scheduling and rota planning to ensure adequate coverage during peak hours. Manage food cost targets and ensure compliance with budgetary guidelines. Review and update costings regularly to ensure the best product quality at optimal pricing. Prepare and maintain the sushi kitchen’s SOPs and culinary operations manual. Ensure full compliance with all food safety, allergen, and hygiene regulations. Qualifications 5-7+ years of experience as a Sushi Chef in high-end, high-volume restaurants Mastery of sushi techniques, including omakase, sashimi, nigiri, and maki Experience managing and developing sushi teams Fluent in English; Spanish or Japanese a plus Proficient knife and butchery skills with various types of fish and seafood Comfortable working in a dynamic, fast-paced environment Basic computer skills (inventory systems, ordering, internal communication) Flexible schedule including nights, weekends, and holidays Why Join Amazónico Miami?
