Helmed by Chef Omar Flores, a two-time James Beard Semi-Finalist, Best Chef SW and Dallas Rising Star Chef, this is Chef Flores’ newest passion project several years in the making. Dallas-Fort Worth Area (Relocation Required) Casa Brasa is seeking a highly skilled and passionate Pastry Chef to lead the dessert program and craft the sweet identity of our restaurant. This is a unique opportunity for a creative culinary professional to design and execute a dessert menu that complements our fire-driven cuisine, sultry Mexican steaks, and Sinaloan sushi. The ideal candidate will bring a refined sense of flavor, artistry, and technique to the pastry kitchen, while embracing bold, culturally inspired concepts.

Key Responsibilities:

Develop and execute an evolving dessert menu featuring Latin-inspired techniques, ingredients, and presentations Lead and train the pastry team on production, plating, and prep execution Ensure consistency, taste, and quality across all pastry items Manage pastry inventory, ordering, and food cost control Collaborate with the culinary team for special events, seasonal features, and tasting menus Maintain impeccable kitchen cleanliness and food safety standards Innovate within Latin pastry traditions—think tres leches reinterpretations, churro variations, tropical fruit applications, and more

Ideal Candidate:

3+ years of pastry chef experience in upscale or fine dining kitchens Strong knowledge of Latin American desserts, ingredients, and traditional techniques Proven ability to lead and manage a small team in a fast-paced environment Creative mindset with an eye for modern plating and presentation Strong organizational skills and attention to detail Food Handler’s Certification (or willingness to obtain) Bilingual (Spanish/English) is a plus, but not required

Physical Demands:

Ability to work in a standing position for 8-10 hours per day Ability to lift 60lbs (50lbs overhead) Stand for a long period of time. Be able to kneel, crouch, stoop, twist, reach, push, pull and grasp throughout the day. Hearing and communicating in person or over telephone. Big dill is an equal opportunity employer.
