We’re now seeking a skilled Sushi Specialist to craft innovative sushi dishes and deliver an exceptional guest experience.

Position Summary:

The Sushi Specialist is responsible for preparing high-quality sushi and sashimi offerings, maintaining the highest standards of food safety, cleanliness, and artistry. This role requires precision, speed, and a passion for Japanese culinary tradition with a modern coastal twist.

Key Responsibilities:

Prepare all sushi and sashimi items according to restaurant standards and plating aesthetics Collaborate with the Executive Chef on seasonal specials and curated tasting experiences Maintain knowledge of all ingredients, allergens, and menu components Ensure freshness and proper storage of all raw fish and seafood Maintain a clean and sanitary sushi station throughout service Monitor inventory of sushi-specific ingredients and communicate ordering needs Uphold knife skills, proper cutting techniques, and portion control Interact with guests (when applicable) to enhance the dining experience through sushi presentation and education Follow all food safety and sanitation guidelines (HAACP or equivalent)

Qualifications:

2+ years of sushi preparation experience in a high-end or high-volume setting Deep understanding of raw fish handling, knife techniques, and sushi rice preparation Ability to work efficiently in a fast-paced, open kitchen environment Attention to detail and strong visual presentation skills Passion for seafood and a modern coastal aesthetic Ability to lift 30 lbs and stand for long periods of time Culinary degree or formal sushi training is a plus
