Job Summary The individual in this position must maintain high quality standards for each dish that is prepared, and assist with a la carte and private event food production while maintaining consistent food preparation and plate presentation for a la carte venues and catered events. Job Duties and Tasks Accurately and efficiently prepares, stocks, and maintains the highest quality cuisine for Members and guests. Maintains consistent food preparation, portion size, quality standards, and exceptional plate presentation. Follows Kitchen rules, policies, and procedures while adhering to safety standards. Ensures workstation is clean and sanitary at all times including tables, shelves, grills, broilers, fryers, and ovens. Follows regulations for cleanliness and sanitation while cleaning station floors, counters, tools, cutting boards, and preparation surfaces. Assists with opening the Kitchen properly following proper procedures. Promptly reports all product shortages, equipment problems, or food quality issues to Executive Sous Chef or Chef. Ability to create and follow recipes. Possesses knife skills. Understands cooking vocabulary and instructions. Must read and track tickets during service to determine what/when items need to be prepared. Ability to use proper portioning techniques. Follows safety protocols and procedures. Requirements A minimum of 2 years’ experience in kitchen preparation and Line Cook experience. Performs well in a high-stress environment, maintaining a positive attitude. Must be a team player and accept constructive criticism. Ability to stand for long periods of time, climb, balance, stoop, and kneel. Must be able to lift 30-40 pounds and move objects up to 50 pounds. Must be able to continually bend, reach, twist and use hands and arms. Must be able to work evenings, weekends, and holidays. This position works primarily morning and early afternoon hours.
