Position Summary:

At The Perlant, as a Sous Chef is a senior member of the culinary team responsible for not only executing dishes to the highest standards but also supervising the line, supporting team development, and upholding operational consistency in a fine dining environment. This role requires advanced technical skill, leadership, and the ability to coordinate a high-performing kitchen team under pressure.

Key Responsibilities:

Prepare and maintain your station in a state of readiness for every shift, with a team-oriented mindset.
Ensure all fresh herbs are picked, chopped, and organized prior to service. Wipe down and sanitize the kitchen line thoroughly before service begins.
Monitor protein inventory and immediately notify the Chef when five or fewer portions remain.
Temper proteins such as steaks and chickens in advance of dinner service to ensure proper cook times and quality.
Maintain a clean, organized, and sanitary workstation at all times.
Communicate proactively with porters and sous chefs regarding pot and pan availability, and with runners regarding plate stock levels.
Ensure all sauces and plated dishes meet the visual and flavor standards established by The Perlant.
Collaborate closely with the Sous Chef, asking questions when clarification is needed to maintain consistency and alignment with service expectations.
Participate in end-of-service breakdown, including scrubbing down your station, providing inventory updates, and preparing your personal prep list for the following shift.

Food Preparation:

Prepare and execute dishes to order using written recipes, with precision and attention to quality.

Quality Control:

Oversee food quality, portion control, and proper handling to ensure every dish meets The Perlant’s standards.

Coordination:

Coordinate and evaluate the performance of junior kitchen staff; assist with recipe testing, refinement, and implementation as needed.

Sanitation and Safety:

Enforce all sanitation and food safety standards; ensure workstations and equipment are cleaned and maintained according to health code and company protocol. Skills & Attributes Encouraged

Culinary Techniques:

Proficient in a wide range of cooking methods suitable for fine dining execution.

Knife Skills:

Demonstrates safe, efficient, and precise knife work during prep and service.

Time Management:

Balances multiple tasks efficiently to maintain service speed and quality under pressure.

Food Safety Knowledge:

Applies best practices in handling, storage, and sanitation to ensure a safe and compliant kitchen environment.

Detail:

Consistently delivers on visual and flavor standards in plating, seasoning, and timing.

Manages a high volume of tickets and components simultaneously without compromising quality.

Maintains a collaborative and respectful relationship with all BOH and FOH staff to ensure seamless service.

Capable of standing for extended periods and working long shifts in a physically demanding environment.

WORKING CONDITIONS

Full-time position (evenings, weekends and holidays as required).
Based in Atlanta with an Office/Club environment.
Ability to lift wine cases and bottles up to 40 lbs.
Ability to stand and walk for extended periods.
Ability to work in a fast-paced, high-volume environment.
