Position Overview:

The Chef de Cuisine is responsible for the daily execution of back-of-house operations at our Restaurant. This role ensures consistency in food quality, plating, and preparation that reflects our seasonal, ingredient-driven approach. The Chef de Cuisine leads the kitchen team during service, supports menu innovation, maintains kitchen standards, and fosters a high-performing and inclusive culinary culture that supports the guest experience and financial goals.

Responsibilities and Duties:
Culinary Execution & Standards:

Lead all kitchen operations at our Restaurant, ensuring consistent food quality, taste, and presentation in line with our seasonal and local ethos. Manage and support line cooks and prep staff during service. Maintain cleanliness, organization, and operational flow in the kitchen. Execute and refine menus that highlight fresh, local farm ingredients in collaboration with the Executive Chef and culinary partners. Ensure proper portioning, plating, and recipe adherence across all menu items. Support R D for specials and seasonal offerings.

Kitchen Operations:

Ensure smooth prep and service workflows aligned with our Restaurant’s service style and pace. Collaborate with leadership to monitor and manage food and labor costs. Track prep levels, reduce waste, and uphold inventory standards. Maintain kitchen organization, labeling, and storage per health code standards.

Financial Management:

Own and manage our Restaurant’s kitchen budget, including food costs, labor costs, and operational expenses. Lead the execution of cost control measures to ensure profitability without compromising food quality or guest experience. Analyze financial performance regularly and implement strategies to optimize revenue and minimize waste. Partner with the Executive Chef and GM to align culinary decisions with financial targets and business goals.

Inventory Management:

Manage inventory levels of food items and disposable paper goods. Oversee ordering, receiving, and storage to maintain adequate stock and minimize waste. Conduct regular inventory audits and maintain accurate records.

Team Leadership & Development:

Assist in recruiting, hiring, onboard, training, and developing a high-performing kitchen team. Provide ongoing coaching, feedback, and performance evaluations to promote growth and development. Create and manage team schedules to ensure optimal operations and proper staffing. Foster a positive and inclusive workplace culture that promotes teamwork and employee engagement. Facilitate clear, cross-functional communication with team members and across your department. Promote strategies to enhance employee engagement, retention, and job satisfaction. Handle staff conflicts and issues promptly and professionally to maintain team morale, collaborating with your Executive Chef and GM as needed. Ensure all decisions align with Rally’s brand guidelines, values, and strategic goals.

Guest Experience & Guest Engagement:

Ensure a consistently high level of customer service and guest satisfaction throughout the venue. Anticipate guest needs and proactively solve potential issues to ensure a best-in-class hospitality experience. Address and resolve guest concerns and complaints promptly and professionally. Develop and implement programs and promotions to enhance guest engagement and increase loyalty. Monitor guest feedback and use it to continuously improve offerings and service quality and offerings.

Compliance and Safety:

Ensure compliance with health, safety, and sanitation regulations throughout the kitchen. Train staff on proper food handling and safety protocols to maintain high standards. • Conduct regular audits to ensure the kitchen is operating in compliance with company policies and regulations. Consistently demonstrate excellent attendance and punctuality, adhering to PTO and attendance policies and maintaining proactive communication regarding any schedule changes. Consistently demonstrate excellence in meeting deadlines and over communicating regarding any adjustments to timelines as needed. Maintain active ServSafe certification and ensure compliance with other mandatory certifications.

Qualifications:

Associate’s or Bachelor’s degree in Culinary Arts, Hospitality Management, or a related field preferred. Minimum of 3 years of experience as a Chef de Cuisine or in a similar role in an upscale environment. Strong culinary skills with a passion for creativity and innovation. Proven ability to assist in achieving sales targets and managing financials. Excellent leadership and team management skills. Strong organizational and multitasking abilities. Exceptional customer service and interpersonal skills. Proficient in Microsoft Office Suite and familiar with kitchen management software. Ability to work flexible hours, including evenings, weekends, and holidays.
