Job Description

Responsible for all culinary production for all locations and in tandem with Culinary Director. Responsible for all back of house operations including menu and recipe development, maintenance of all food production quality and consistency, the organization and cleanliness of all culinary spaces, inventory management, order placement, vendor relationships, staff scheduling, the enforcement and maintenance of sanitation practices and the development and growth of all back of house teams. Ensure food and service always exceeds company standards of excellence. Ensure the quality and consistency of all culinary production and the recording of all food items in menu and recipe development. Support revenue and costing initiatives by monitoring labor hours and cost of goods. Schedule of all BOH staff in accordance with the needs of each location while adhering to the BOH budget parameters. Communicate effectively with other teams and heads of departments to streamline accuracy and increase efficiency companywide. Demonstrate leadership skills and setting the expectation for junior team members in maximizing their productivity, maintaining cleanliness of stations, workspaces and food quality while providing accurate and speedy service. Mandating and enforcing the hygienic and sanitations standards in accordance with business standards and the NYCHD. Ensure that all team members fulfil their operational duties and tasks are completed in a timely manner.

Travel:

10% travel and work from the 646 Lorimer Street, Brooklyn, NY 11211 and Grand Central Terminal 89 East 42nd Street, New York, NY 10017 locations when needed

Job Requirements:

Must have 2 years of experience in the job offered or a related role. Must also have experience with (i) cooking traditional Ukrainian food, such as Borscht, Stuffed cabbage, and Bigos; (ii) working with traditional Ukrainian ingredients such as cabbage, beets, Smoked meats, sour cream, and Dill; (iii) working with food preparation and handling for cooking; (iv) working with all stations including cold, hot, soup, pierogi; and (v) preparing re-duction sauces for meats. Must have ability to lift 50 lbs and work on one’s feet for an extended period of time.
