July 1 – June 30 Position Summary Oversee culinary production ensuring that safety, quality, quantity and appearance standards are met. Support and assist the catering production ensuring that safety, quality, quantity and appearance standards are met. Education Required Associate’s Degree in Culinary Arts; Certificate in ServSafe Experience Required 2 – 5 years of hotel or institutional culinary experience Skills, Characteristics Required for Position Excellent leadership skills including the ability to train, mentor, and direct staff;
Effective time management skills including the ability to coordinate resources within the department;
Demonstrated culinary skill and artistic ability;
Must also have an understanding of food cost, labor cost, contribution margin,and other factors which directly affect net profit. Special Working Conditions Staff member must be able to lift 50 lbs using proper lifting technique. Must be able to perform all essential job functions, which require prolonged standing in one place, pushing, pulling, lifting and walking on hard surfaced floors. Must be able to adjust schedule to provide coverage for special interest catered events and special board operation events. This position is essential; employees providing essential services must report to work as scheduled by their supervisor in the event of an emergency closing or delay. Driving Requirements This position requires the operation of a Messiah College owned or leased vehicle and the employee must possess and maintain a current driver’s license, meet the established criteria, and abide by all policies and procedures as presented in the College’s Fleet Vehicle Use Policy. Essential Employee Essential – Emergency Only Primary Duties 1. Oversee culinary production ensuring that safety, quality, quantity and appearance standards are met.
2. Support and assist catering production ensuring that safety, quality, quantity and appearance standards are met.
3. Actively participate in food production ensuring completion.
4. Coordinate menus and production with staff for board operation and special events.
5. Oversee cleaning of kitchen and equipment and closing sanitation standards.
6. Oversee kitchen security and closing security procedures.
7. Oversee kitchen safety by monitoring and training employees in proper equipment use and technique, proper food holding temperatures, and proper food storage.
8. Schedule staff on a monthly basis.
9. Train and supervise direct reports. Prepare annual reviews.
10. Attend and participate in Menu Planning, Management Team and ED meetings.
11. Maintain consistent and reliable attendance. Secondary Duties 1. Recommend training programs to staff.
2. Assist in continued training and development of staff.
3. Special projects assigned by Executive Chef.
4. Other duties as assigned.
