$80000 per year – $90000 per year At Great Wolf, theRestaurant Executive Chef is responsible for all operations of thekitchen(s): creates and updates menus to maximize profits andminimize loss, tests and develops recipes, monitors customersatisfaction, maintains inventory of kitchen supplies and food, andensures that food and facilities meet all governmental regulations.

  • Paid parental leaveEssential Duties & Responsibilities Manage and direct thepreparation and presentation of all foods in all venues of theLodge Maintain and follow all local Health Department foodpreparation codes and regulations Ensure all food preparationlicenses and training (as required) is maintained by all packmembers Hire, train, supervise, schedule and participate inactivities of chefs, cooks, and other pack members involved inpreparing, cooking and presenting food in accordance withmerchandising and productivity standards, cost controls andforecast needs Listen actively and communicate clearly whileinteracting with guests to promote food products and directingstaff activities Analyze feedback from guests and pack members,make judgments and take action to implement suggestions forimprovement Maintain working rapport with all hotel staff forefficient operation and service to guests Monitor staffperformance, product quality and production flow; fosterimprovement where necessary Create and implement new menus andindividual menu items for all outlets based on current food trends,regional demographics and in accordance with revenue andprofitability goals Develop innovative menu selections for specialbanquet themes and parties in accordance with client budgetaryconsiderations and expectations Confer with Director of Food andBeverage regarding new selections and changes Audit food storeroomitems and storage to maintain consistent quality products usingFIFO (first in, first out) and ensure adherence to all health coderequirements Maintain controls and tracking of high value items(proteins such as steaks, bacon and sausage, etc.

) Development,implementation, and monitoring of programs that assures a safefacility and work environment that is in compliance with allappropriate regulations-Food Safety, Ergonomics, EmergencyResponse, Injury and Illness Prevention, and Hazard CommunicationsPrograms Assist the Food & Beverage Director in estimating annualfood budget and controllable expenditures Basic Qualifications &Skills High School degree or equivalent 5 years experience inrestaurant kitchen(s) 1 years experience in restaurantsupervisory/leadership role responsible for financials, menudevelopment, and personnel related matters Must be flexibleregarding scheduling based on business demands, including nights,weekends and Holidays as needed Successful completion of criminalbackground check and drug screen Desired Qualifications & TraitsCulinary education degree Previous Executive Chef experience Priorkitchen experience in hotel/resort industry Understanding ofsanitation-related issues and knowledge of precautions necessary toensure a clean food preparation environment Proven teamworkProjects professional image that inspires trust and confidenceEnthusiastic and positive energy Physical Requirements Able to liftup to 30 lbs.
