Culinary Director Thurston Southern Charleston, SC 29401 Thurston Southern is seeking an experienced and visionary Culinary Director to lead the program at a fine dining, multi-unit restaurant in downtown Charleston! This role requires a deep respect for European culinary tradition, impeccable technique, and the ability to create thoughtful, seasonal menus that honor both classic and contemporary western European gastronomy.
REQUIREMENTS
Minimum 8 years of progressive culinary experience, with at least 3 years in a leadership position at a fine dining level. Mastery of European culinary techniques, both traditional to modern. Exceptional palate, attention to detail, and commitment to excellence. Proven ability to lead teams with poise, professionalism, and humility. Culinary degree preferred; experience and artistry will also be highly valued. Key ResponsibilitiesCulinary & Concept Management Conceptualize and execute refined seasonal menus that reflect the spirit of established concept Maintain exceptional standards in taste, technique, and presentation across all offerings. Collaborate closely with the beverage team to create cohesive pairings and culinary experiences. Stay attuned to culinary trends relevant to concept, bringing fresh yet respectful perspectives to the menu. Leadership & Team Culture Lead and mentor a professional culinary staff with a focus on excellence, discipline, and continuous refinement. Foster a culture of pride, precision, and collaboration within the culinary team. Oversee hiring, training, and development of all kitchen management Operational Excellence Establish and maintain kitchen systems that support consistency, efficiency, and precision. Ensure adherence to all health and safety regulations, maintaining an immaculate and well-organized kitchen environment. Conduct regular evaluations of prep, service flow, and kitchen logistics. Product & Cost Management Manage food costs and vendor relationships with a focus on premium quality and seasonal sourcing. Work with purveyors to secure the finest ingredients, with an emphasis on authenticity and sustainability. Oversee the management of inventory, waste, and ensure thoughtful purchasing practices. Guest Experience & Brand Stewardship Collaborate with front-of-house leadership to ensure seamless integration between kitchen and service. Uphold the culinary identity and integrity of concepts in every guest interaction and plated detail. Represent the restaurant at select culinary events and engagements.
