Pastry Chef Rerun Restaurants Charleston, SC 29403 Melfi’s, the beloved Italian restaurant on Upper King Street, is seeking a professional Pasty Chef. The Pastry Chef oversees the entirety of the dessert program, including ice creams, as well as overseeing prep/production of all dough, including pizza and pasta. This is an AM position – at times requiring shifts during lunch services (on the line) with a typical schedule of approximately 50 hours per week. We are looking for a strong manager who leads by example, mentoring and developing the BOH staff. The ideal candidate provides a strong back-up to the Executive Chef and Sous Chef team. This position is responsible for ensuring the highest levels of cleanliness and organization are maintained at all times in the kitchen and all other kitchen storage areas. This position should have strong knowledge of DHEC Regulations regarding cleanliness, food storage temperatures, and cook temperatures.
Responsibilities include:
Contribute to daily manager logs Contribute to kitchen needs such as: manage recipes/order guides, prep lists, schedule, inventory, variance report, food/labor cost, food check in/quality control, HAACP logs Working the line and doing prep as needed
