Sushi Chef Mesu 570 King Street, Charleston, SC 29403 Job Summary We are seeking a skilled and passionate Sushi Chef to join our team at Mesu. The ideal candidate will have a passion for Sushi, with a focus for creating beautiful dishes and rolls. As a Sushi Chef, you will be responsible for creating high-quality dishes that meet our standards for taste and presentation. You will work in a fast-paced kitchen environment, collaborating with other kitchen staff to ensure an exceptional dining experience for our guests. Duties Prepare and assemble sushi dishes according to established recipes and presentation standards. Maintain high standards of food safety and hygiene in accordance with health regulations. Utilize various kitchen tools, including knives, to prepare ingredients efficiently and safely. Collaborate with the culinary team on menu planning and special dietary requests. Ensure the kitchen is organized, clean, and stocked with necessary ingredients for sushi preparation. Monitor inventory levels of sushi ingredients and communicate needs to the management team. Stay updated on culinary trends in sushi and Japanese cuisine to enhance menu offerings. Skills Proficient knife skills for precise cutting and preparation of fish and vegetables. Strong understanding of food safety practices to maintain a clean and safe kitchen environment. Experience in food preparation within a high-volume restaurant setting. Knowledge of culinary techniques specific to sushi making, including but not limited to making rice, breaking down fresh fish, sashimi, nigiri and rolling sushi. Ability to work collaboratively within a kitchen team while maintaining focus on individual tasks. Creativity in menu planning to introduce new dishes that appeal to customers’ tastes.
