Life of Our Executive Chef:
As the Executive Chef at Midwood Smokehouse, you will oversee all culinary operations, from scheduling and strategic ordering based on sales trends to direct involvement in hiring and flawless shift execution. Your role is crucial in mentoring sous chefs and back-of-house staff, ensuring every dish upholds the Midwood Smokehouse standard. Enhance guest experiences by collaborating with the General Manager on food quality and consistency. For example, ensuring that our signature smoked meats, like the North Carolina pulled pork or the Texas-style brisket, consistently meet our high standards. Lead and develop the culinary team, promoting a positive and motivating environment. For instance, you’ll help mentor sous chefs, guiding them through smoking techniques, ensuring they’re up to date on the latest industry trends and best practices. Manage daily kitchen operations, ensuring smooth service, inventory management, and addressing any restaurant concerns effectively. This includes overseeing the proper maintenance of our custom-built smokers and making sure that the entire kitchen runs efficiently during peak hours. Maintain rigorous health, safety, and sanitation standards, ensuring the team follows all food safety regulations. This includes preparing for inspections and ensuring compliance with local health department regulations.
Requirements:
High School Diploma; Four Year Degree or Culinary Degree preferred. Minimum of 4 years’ culinary management experience in a high-volume environment, with a strong focus on barbecue and/or Tex-Mex cuisine. Expertise in smoking techniques, pit equipment maintenance, butchery skills, and high-volume kitchen management. Proficient in kitchen sanitation, safety standards, and inspection preparations. Strong leadership, mentoring, communication, and time management skills. Lead by example and foster a positive and motivated work environment. Valid ServSafe certification is a plus. Must have the stamina to work up to 55 hours per week. Must be able to work in a standing position for long periods of time (up to 10-12 hours). Ability to work flexible hours, including evenings, weekends, and holidays.
