THE ROLE

The Harpeth Hotel in historic downtown Franklin is looking for a full-time Pastry Chef to join our team in providing quality pastries for our guests! Our pastry chef will create one-of-a-kind pastries for both of our on-site full service restaurants. Shifts are available for both morning and evening, 7 days a week. POSITION PROFILE

Maintain safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; supervise the maintenance of kitchen equipment to protect the assets, to secure revenues and comply with legal regulations and ensure quality service. Promote teamwork and quality service through daily communication and coordination with other departments. Assist sales, catering and banquet staff with banquets, parties and other special events. Maintain product consistency by conducting inspections of portion, appearance, and taste of food. Maintain procedures to ensure the security and proper storage of food and beverage products, inventory, and equipment. Replenish supplies in a timely manner and minimize waste and pilferage. Ensure that all menu items are prepared and presented according to established recipes and brand standards. Develop and implement menus and back-up (use records, production lists, pars, training, etc…) within industry guidelines to continually improve revenues and profit margins while maintaining quality. Ensure that all kitchen equipment and storerooms are in proper operational condition and are cleaned on a regular basis.

DESIRED SKILLS AND QUALIFICATIONS
Education:

Two to four year college degree or equivalent education/experience

Preferred Experience:

Minimum 6 months’ experience in a pastry role. Hotel experience preferred.

Skills and Abilities:

Strong knowledge of operating industrial sized ovens. Possess knowledge of professional pastry cooking and knife handling skills. Must have an understanding and be knowledgeable of safety, sanitation, and food handling procedures. Must have manual coordination to punch buttons, grasp items in hand, and carry containers loaded with food and liquids. Able to read, speak and understand English. Able to lift, push, carry over 50lbs. Ability to stand continuously for long periods of time. Communicate information and hotel services to management, staff and guests.
