The Cook reports directly to the Food and BeverageDirector.
Shift Details – Full timeMon-Fri ; Every other weekendrequiredPURPOSEThe Cook is responsible for all food preparation sothat food meets and / or exceeds quality, quantity and serviceschedule requirements and hospitality service standards for thecommunity.
Responsible to effectively manage all food production inthe absence of the Lead Cook or Food and Beverage Director.
Responsible for handling all foods in accordance with sanitaryprocedures and standards and complies with all federal, state andlocal regulatory proceduresregarding food production.
PRINCIPLEDUTIES AND
RESPONSIBILITIESPreparation and Food Service Summary of general responsibilities include but not limited tothe preparation and serving of meals, sanitation of food serviceareas, accurate record keeping, receiving, rotating and inventoryof products and regulatory compliance Adheres to posted menus and prepares food items using approvedPhoenix standardized recipes in a timely manner Adheres to production sheets and instructions Prepares all special dietary needs as directed Prepares texture modified food as directed Organizes work to meet production and service requirements Monitors all food items to see that at least the minimumguidelines for temperature, taste and quality are upheld at alltimes Taste and prepares food to determine quality or necessaryadjustment Maintains sanitary conditions to ensure safety and compliancewith regulations; responsible for cleaning work areas Follow all local, state and federal policies regarding foodhandling Maintains standards of cleanliness, hygiene and healthstandards Operates dish machine(s) according to Food SafetyStandards Operates dishwashing to properly wash and sanitize all dishesand china, silverware, glassware, utensils and cookware, innecessaryRecord Keeping/Resident Services Responsible for the recording keeping and maintaining thefollowing measures for service standards and regulatorycompliance Maintains and protects the confidentiality of residentinformation at all times Reviews Resident Diet Book, confidential Diet Board /Indicator, Data Card or Chart Responsible for the recording keeping and maintaining thefollowing measures for service standards and regulatorycomplianceManually records equipment temperaturesManually recordsrefrigerator temperaturesManually records freezertemperaturesManually records cooking temperatures of thefoodManually records holding temperatures of the foodManuallyrecords cooling temperatures of the foodManually records foodproduction quantitiesManually records taste evaluationsheetsRotates menus and productionsheets
Requirements:
EDUCATION/EXPERIENCE/LICENSURE-CERTIFICATIONCook Education:
