Prepare cold and hot sections of the kitchen service line; Weigh, measure, and mix ingredients according to recipes, usingvarious kitchen utensils and equipment; Observe and test foods to determine if they have been cookedsufficiently, using methods smelling, or piercing them withutensils; Inspect food preparation and serving areas to ensure observance ofsafe, sanitary food-handling practices; Carve and trim meats such as beef, veal, ham, pork, and lamb forhot or cold service, or for sandwiches; Prepares a variety of meats, seafood, poultry, vegetables and otherfood items for cooking in broilers, ovens, grills, fryers and avariety of other kitchen equipment; Stocks and maintains sufficient levels of food products at linestations to assure a smooth service period; Follows proper plate presentation and garnish set up for alldishes; Assists others in closing the kitchen; Assist in other areas as needed and assigned by other CDS KitchenManager and Head-Chef.
