Job Description
Line Cook Skippers Dockside Key Largo, FL 33037 Prepare Items as required to recipe cards, use records and production charts with accuracy speed and “Clean as you Go” policy Follow all policies, procedures and kitchen rules and regulations as outlined in the associates handbook Prepare mise-en-place for station and meal period. Assist other cooks as needed. Set up, restock and maintain food preparation areas Serve all menu items with proper plate presentations. Comply with “Quality and Food Safety Standards” Attend all kitchen meetings as directed Ensure that all food items are on hand for appropriate meal periods Date all food containers and rotate as per the
SOP/ECOSURE
standards following the FIFO policy Making sure that all perishables are kept at proper temperatures Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage Assist with all banquet dish-ups, carving and pre-dish preparation Provide leadership on the line in assistance to Sous Chef and Executive Chef Flexibility in available to work according to business needs, including early mornings, nights, weekends and holidays.
