PANTRY COOK
Martha’s Vineyard, housing available (Edgartown, Martha’s Vineyard) l’etoile restaurant 22 North Water Street near Winter Street compensation: Pay is BOE, starting at $22 an hour with overtime available employment type: job title: Appetizer Cook, Garde-Manger Lead Garde-manger / Cold Appetizer Station. Applicants must be able to start asap. We have a possible housing option available at @$250 a week. Must be able or willing to learn to shuck oysters! Daily ???? Possible two nights on the hotline plating food with chef & line cook. Position is responsible for running the cold side of the kitchen and executing their assigned duties on the daily work list.
- Making of seasonal cold soups, it’s garnishes and presentation
- Daily mise of Crudo, Ceviche dishes and garnishes and plating to order
- Receiving, storage, rotation safe Handling of local Oysters upon delivery
- Opening of oysters daily and proper handling and storage of then before service
- Mignonettes, creams and all mise for oyster presentation
- the mise of our seasonal salad and assembly to order in service
- the mise of our deconstructed spinach salad and assembly to order in service
- Curing of egg yolks for spinach salad, maintaining par
- all vinaigrettes, dressings and herb oil’s for the menu
- Rotation and maintenance of all salad greens in walk-in and in the station
- Assist in setting up dessert station for service. coulis, sauces
- in charge of creating and execution of daily staff meal with line cooks.
- Having the proper plates in stations for each item prior to service
- Responsible for running any pots, pans, utensils used through the dishwasher prior to service and putting them away. We do not have a dishwasher during the day.
- Maintain a clean and sanitary workstation in-service
- Wrap up and proper storage of in-service items for use if possible for the next day
- Filling out of the daily work list after service l’etoile is seasonal Chef-Owned and operated.
We are only open for dinner service. We are a serious, busy and enjoyable crew to work with. We work in a compact highly organized chef-owner run kitchen. We love what we do and have a great time doing it as a healthy cooperative team. We serve a seasonally driven contemporary menu sourcing locally as much as possible. We are focused totally on guest satisfaction. This position starts immediately and runs through mid- November. Join us and be part of something special as many have over our our 35 years in business. Having a vehicle is good to access the housing we have to rent in a nearby town. We have a great public transit bus system here but the bus stop is a trek. Two days off a week. Principals only.
