Job Details Position Overview:
Leonard’s Palazzo, a premier event venue renowned for its exceptional service and elegance, is seeking a dynamic, highly motivated, and detail-oriented Banquet Production Cook to join our team. As a Banquet Production Cook, you will be responsible for preparing high-quality food in a high-volume, fast-paced culinary environment. The position requires strict adherence to standardized recipes, food safety procedures, and production schedules. This is an exciting opportunity to demonstrate strong culinary fundamentals, including meat fabrication, stock and sauce preparation, and batch cooking methods in a banquet environment.
Key Responsibilities:
Follow standardized recipes and production guidelines to ensure consistency and quality.
Perform meat fabrication including portioning, trimming, and prepping proteins for events.
Prepare stocks, sauces, soups, and other foundational elements of the menu.
Execute large-batch cooking for banquets using appropriate techniques (e.g., roasting, braising, steaming, etc.).
Utilize bag and chill systems for safe food preparation and storage.
Receive, inspect, and store food deliveries in compliance with safety and quality standards.
Maintain cleanliness, organization, and proper labeling in all storage areas including walk-ins, dry storage, and prep areas.
Ensure all food is prepared and stored in accordance with HACCP and DOH guidelines.
Work collaboratively with kitchen staff and front-of-house teams to meet production timelines and event needs.
Assist in the setup, breakdown, and cleaning of workstations and production areas.
Demonstrate effective time management and prioritization to meet tight production schedules.
Qualifications:
2+ years of experience in a high-volume catering or commercial kitchen setting preferred.
Proficient in knife skills, meat fabrication, and classical cooking techniques.
Strong knowledge of food safety standards and kitchen sanitation practices.
Ability to follow recipes and instructions accurately and consistently.
Excellent organizational and time management skills.
Capable of lifting up to 50 lbs and standing for extended periods.
Able to work flexible hours, including early mornings, evenings, weekends, and holidays as needed.
