Job Description:
The Line Cook / Pit Master is responsible for preparing high-quality food, including smoked meats, seasonings, and sauces, while ensuring the smooth operation of all restaurant production areas. This position requires expertise in both traditional kitchen operations and smoking techniques, working closely with the Executive Chef and Sous Chef to maintain the highest food quality standards.
Duties, Responsibilities, and Requirements:
Plan, prep, set up, and provide quality service in all areas of restaurant production, including all menu items supplied by the kitchen. Ensure proper handling, storage, and rotation of all food items. Follow recipes, portion controls, and presentation specifications as set by the culinary team. Maintain a clean and organized station while practicing good safety and sanitation skills during prep and service times. Set up and maintain steam tables, ensuring proper water levels and heated food to appropriate temperatures for service. Follow prep lists created by the Executive Chef or Sous Chef, adhering to established recipes. Prepare food items efficiently while maintaining the highest food safety and presentation standards. Work as an early morning (5:00 am) keyholder, ensuring reliability and timeliness. Manage raw meat handling, smoking processes, and fire maintenance for optimal cooking results. Operate and maintain multiple smokers, handling various proteins under time constraints. Monitor food quality, ensuring consistency in seasoning, texture, and presentation. Load and unload smokers, coolers, and dry storage areas, assist in checking in orders, packaging products, and catering needs. Adapt to daily changing restaurant needs with flexibility and efficiency. Ensure compliance with health, safety, and sanitation regulations.

Maintain composure and use good judgment to resolve problems in a fast-paced environment. Meet production schedules and food display timelines. Handle multiple tasks professionally while working under pressure. Follow recipes precisely, adjusting them as needed to maintain consistency. Work in an intense, high-temperature environment, often under extreme heat and stress. Maintain a clean, neat, and organized work environment at all times.
