JOB TITLE

SUMMARY:

Responsible for the preparation of foods for patients, guests and personnel; maintaining high standards of quality food production and portion control using standardized recipes.

EDUCATION AND EXPERIENCE
Education:

High School Diploma/GED preferred.

Experience:

Experience in commercial food preparation preferred.

Knowledge/Skills:

Knowledge of food preparation. Ability to follow written and verbal directions. Verbal/written communication skills.

EQUIPMENT

Dietary equipment and any other equipment required to perform the functions of the position.

MAJOR DUTIES AND RESPONSIBILITIES

1. Prepares nutritious meals and snacks to residents. Directs staff in food preparation and serving procedures in their absence.
2. Follows standardized recipes.
3. Schedules food preparation, ensuring items are served prior to the date of expiration. Foods are rotated to eliminate waste and ensure utilization prior to expiration.
4. Establishes food requirements and serving portions in children’s’ and adults’ portions in order to eliminate waste.
5. Portions food in accordance with yields specified in standardized recipes.
6. Maintains customer satisfaction with regards to quality, quantity, variety of meals and customer service.
7. Keeps temperature logs daily on equipment and ensures staff complete daily required documentation in their absence.
8. Checks equipment and cook areas often, to ensure that a high degree of sanitary and safety standards are maintained.
9. Immediately reports any equipment in need of maintenance or repair to direct supervisor.
10. Responsible for the care and sanitation of the overall kitchen, including equipment and dinning area. Ensures program staff are trained to consistently follow Health Department, licensure and sanitation standards.
11. Cooks will post menu weekly in view of program residents.
12. All cooks will complete a minimum of annual consultation with a licensed dietitian regarding food services to meet the nutritional and dietary needs of the residents in the program.
13. Attend and participate in regularly scheduled staff meetings and inservices and individual program planning staffings as needed.
14. All other duties as assigned.
