Job Summary:
The production team is responsible for production of cider and mead, cleaning & maintenance of cellar and all associated equipment and supplies, and production related recordkeeping. Duties include, overseeing the production of products from beginning to end, and maintaining a safe work environment. Production team members work closely with the production manager and head cider maker to ensure products remain of the highest quality and consistency and that production goals are met. Production team members are expected to have a positive attitude and should expect a fast-paced work environment. Production Team Members Responsibilities (Additional duties may be assigned): Production from start to finish: The production team members are responsible for daily operations in our cellar. Duties include receiving juice, yeast rehydration and nutrient additions, managing and maintaining fermentations, cleaning tanks and equipment, running crossflow filtrations, and preparing the finished product for sales and distribution
- Standard operating procedures and recipes: The production team members are responsible for making sure recipes and SOPs are followed and maintain competency in all areas of production.
Will work with the production manager and head cider maker to make sure all recipes and SOPs are up to date.
Work with packaging team:
The production team members work with the canning/packaging team members to ensure the product is ready for packaging. This includes helping with packaging operations we needed.

Brewer:
The production team members will work closely with the head Cider Maker to formulate recipes for large-scale production runs and ensure those recipes are correctly followed. The production team members will work with the head cider maker to schedule equipment, materials and ingredients to support the development and production of small batch ciders and mead.
Management meetings:
Attend management meetings with department managers, production manager, and head cider maker.
- Ensure products remains high-quality and consistent: Production team members are responsible for collecting and logging fermentation, conditioning, pasteurization and QA data in Ekos.
- Continually improve production processes: Production team members must adopt a philosophy of continual improvement. They will constantly look for ways to make products more efficiently and increase the quality of the finished product. They will also troubleshoot any problems that occur in the production process.
- Logging all production data in
EKOS:
Responsible for keeping Ekos uptodate with all production data. All products must be logged in Ekos from beginning to end. Responsible for maintaining all required paperwork and records.
- Follow occupational health and safety standards: They must follow occupational health and safety standards to ensure the cellar is a safe place to work.
- Ensure the cidery is extremely clean and complies with food regulations: Monitor and perform preventative maintenance on a weekly/monthly basis as required and ensure the cellar crew follows all Cleaning & Maintenance Schedules.
Production team members must be vigilant when it comes to workplace cleanliness and hygiene. Ensuring that all production equipment is correctly maintained, cleaned and sanitized.

IT skills, Knowledge of EKOS is a plus. Passionate about Cider and Mead Excellent time management, planning and organisational skills Personable, approachable and pleasant demeanor Strong knowledge of cider making practices Strong understanding of process controls Willing to help in any way with any job for the benefit of the department Problem-solving and decision-making skills Strong work ethic, ability to multitask, and work independently Attention to detail and accuracy Physically fit and able to work in a demanding environment Required Minimum Qualifications 21 years or older. Valid North Carolina drivers license and acceptable driving record. Able to kneel and stoop and climb stairs, ramps, ladders. Able to lift and laterally move by hand filled half-barrel keg (154 lbs). Able to lift 55 lbs. from ground to shoulder high Able to work in small and confined spaces Able to execute reasonable safety procedures, including working with chemicals Able to work in a loud environment Able to move heavier items such as kegs, drums, totes, and pallets, using tools such as a hand truck, pallet jack, or a forklift. Desired Qualifications Minimum 6 months of alcohol production experience in a commercial cellar. Experience using filtration equipment, crossflow filter experience highly desired. Forklift proficiency and certifications. Proficiency with G suite, Ekos, and the internet. Looking for a long term job opportunity.
