Our overall best-selling dish is the Fetuccine Alfredo a la Ruota di Parmigiano, so much so that we designed a position exclusively for it. “Ruoteros” bring out the 80Lb ruota di parmigiano atop a custom made wheeled cart to the guest table, where they shave the cheese and finish off the pasta in the parmigiano wheel, all while giving guests a brief but engaging presentation on the history of Parmigiano, the aging process of that specific parmigiana wheel, and the exquisiteness of the dish they are about to savor. “Ruoteros” must be agreeable and comfortable talking to guests. Each “ruotero” is responsible for keeping their Ruota and cart clean, following specific cleaning procedures after every use.
