Oyster Shucker Avanu On Flagler New Smyrna Beach, FL 32169 As a shucker at Avanu, if you do not already have general knowledge of handling oysters then it will be our pleasure to teach you. This will be basic knowledge that you use each shift. As well as the ability to properly open an oyster, clean it, and plate it. You will be working on the third floor and have a great view while working. Along with shucking you will be tasked with setting up a display of the fresh fish that we’re carrying each day. Knowledge of handling such fish will be demonstrated and once you are trained at shucking, you will then learn how to break down a fish and be taught the proper sizes to prepare for the kitchen. The final requirement of a shucker will be training in rolling sushi. Familiarity once again is not required and can easily be taught. All this means that a shucker at Avanu must be good with taking directions and have the willingness to learn. Communication is key as well, whether it be with a fellow shucker, management, or guests as you will be interacting with them regularly throughout the day.
