Oyster Bar Shucker Position Overview:
As an Oyster Bar Shucker, you will play a crucial role in the oyster bar by expertly shucking oysters and ensuring that customers receive high-quality, fresh oysters that are prepared and presented with precision. Your primary responsibility will be to shuck oysters efficiently and safely, while also providing excellent customer service and maintaining a clean and organized work area.

Oyster Shucking:
Skillfully and safely shuck oysters using appropriate tools and techniques, ensuring the oysters are opened without any shell fragments or contamination. Inspect each oyster for freshness and quality, discarding any oysters that are not suitable for consumption. Present the shucked oysters attractively on plates or platters, taking care to arrange them in an appealing and appetizing manner. Label the different varieties of oysters accurately, providing information about their origin and flavor profiles if required. 2
Customer Service:
Interact with customers in a friendly and professional manner, providing knowledgeable recommendations about oyster varieties and flavors. Answer customer questions regarding oyster selection, preparation methods, and pairing suggestions with sauces or beverages. Offer assistance and guidance to customers who are new to oyster tasting, ensuring they have a positive and enjoyable experience. 3
Cleanliness and Organization:
Maintain a clean and organized work area, including the shucking station, oyster shells disposal, and equipment. Follow proper food safety and hygiene practices, such as handwashing, glove usage, and sanitizing of utensils and surfaces. Adhere to health and safety regulations, ensuring that all oysters are handled, stored, and displayed in a safe and sanitary manner. 4
Knowledge and Learning:
Stay updated on the different varieties of oysters, their flavor profiles, and seasonal availability. Continuously enhance your knowledge of oyster shucking techniques and best practices through training and self-learning. Attend staff meetings and training sessions to stay informed about menu changes, specials, and new oyster offerings.
Qualifications:
Previous experience as an oyster shucker or in a similar seafood preparation role is highly desirable. Proficient oyster shucking skills and a strong understanding of seafood quality and freshness. Excellent hand-eye coordination and manual dexterity. Strong attention to detail to ensure oysters are shucked cleanly and presented attractively. Outstanding customer service skills with the ability to communicate effectively and provide recommendations to customers. Knowledge of food safety and hygiene practices. Ability to work in a fast-paced environment and handle high volumes of oyster shucking. Physical stamina and ability to stand for extended periods. Flexibility in working hours, including evenings, weekends, and holidays, as per the demands of the business.
Responsibilities:
Sets up and stocks food items and other necessary supplies. Prepares food items by cutting, chopping, mixing, and preparing sauces. Cooks food items by grilling, frying, sautéing, and other cooking methods to specified recipes and standards. Maintain cleanliness and complies with food sanitation requirements by properly handling food and ensuring correct storage. Cleans and sanitizes cooking surfaces at the end of the shift. Performs inventory checks and completes food storage logs. Communicate with other employees about issues with the quality of food or service. Learn about wine and beverage selections offered by the restaurant. Follow suggestions for improving work performance from immediate supervisors and managers. Document available inventory of ingredients and supplies.
