Position Title:
Food & Beverage Manager, Cape Leisure Ichetucknee Springs, LLC Reports To:
General Manager Supervises:

Hourly food and beverage employees including cooks, cashiers and catering staff.

Overview:

Cape Leisure provides visitor services at Ichetucknee Springs State Park under a concession agreement with the Florida Department of Environmental Protection. These services include tubing & paddling rentals on the Ichetucknee River, retail, food & beverage services, catering, and special events management. Cape Leisure seeks an entrepreneurial self-starter with excellent culinary skills to oversee all aspects of Cape Leisure Ichetucknee’s food and beverage operation. This includes the operation of a counter service café, seasonal mobile food operations, and catering for private events and group gatherings hosted within the park. Position entails both management and chef duties.

Primary Responsibilities:
  • Provide day to day management of food & beverage concession outlets and staff, including: scheduling, delegating tasks, training and performance evaluation of up to 15 employees.
  • Function as lead chef on the cook line for banquets and other shifts.
  • Maintain the highest levels of food sanitation, kitchen safety and overall quality control.
  • Orders, inventories and receives food and beverage deliveries from Cape Leisure’s purveyors.
  • Monitors the controls of food, beverage, retail labor and direct expenses in order to achieve budget goals.
  • Resolves customer complaints as appropriate in order to maintain a high level of guest satisfaction.
  • Working with corporate staff, provides menu development, costing and budgeting support.
  • Properly and accurately receives product, produces required reports for the Cape Leisure corporate office.
  • Adheres to and enforces all Cape Leisure policies and procedures, including but not limited to those related to food quality and safety, employee and guest safety, environmental and financial controls.
  • Ensure that company assets, including equipment, money and inventories, are properly protected.
  • Acts as a Manager on Duty in the absence of the General Manager, directing all Cape Leisure Ichetucknee operations during that time.
  • Other responsibilities as assigned.
Skills and Knowledge Required:
  • Minimum of three years’ experience in the food/retail industry, with at least three years in a supervisory capacity.
  • Excellent culinary skills. Ability to prepare both concession and banquet food.
  • ServSafe Food Manager Certification or equivalent required. Familiarity with HACCP processes also desired.
  • Basic accounting skills.
  • Familiarity with electronic point of sales systems.
  • Excellent communications and interpersonal skills.
  • At least intermediate proficiency with general office computer software such as Excel, Word and PowerPoint.
Physical Requirements:
  • Must be able to move, stand, stoop and bend for an entire 8 hour shift. Tasks require consistent use of both arms and legs.
  • Must be able to lift a minimum of 30 pounds and carry for short distances.
  • Must be willing to tolerate working outdoors and in warm interior environments.
  • Must be able to visually inspect condition of facilities and equipment.
