Required Years of Experience 2 years Job Details The Kitchen Administrator/Manage at KYU plays a crucial role in supporting the Chef de Cuisine (CDC) and Executive Sous Chef (ESC) to ensure the smooth operation and high quality of the dining experience for our guests. This position combines strong culinary skills with administrative oversight, requiring experience in both cooking techniques and back-of-house operations such as inventory management, scheduling, invoices, food cost tracking, and HR documentation. The ideal candidate has a fine-dining background, is highly organized, and thrives in a fast-paced, high-volume environment. Respond to guests’ requests promptly and accurately, creating a positive and memorable experience.

Responsibilities:

Collaborate with the ESC for timely maintenance and equipment repairs. Oversee daily production charts, station mise charts, protein count sheets, and steward checklists. Compose and pass on the End-of-Day (EOD) Report with information from each shift. Maintain and organize administrative records, including employee files, edit forms, availability, emergency contacts, write-ups, reviews, and status change forms. Track and process HR-related paperwork such as PTO/sick requests and onboarding documentation. Attend all required meetings, including FOH Preshift, BOH Manager Meetings, and In-House Manager Meetings. Communicate relevant KYU Global updates, building standards, and sanitation requirements to the BOH team. Train new cooks on KYU Standard Operating Procedures (SOPs) and food specifications. Conduct weekly inventory and data input; ensure inventory systems are updated and accurate. Manage scheduling for direct employees by 7 p.m. each Thursday and ensure proper coverage. Review and approve daily timecards and ensure compliance with break requirements. Assist with events and support hourly employee management as directed. Place daily orders for food and supplies while adhering to budget, sanitation, and safety standards. Conduct and document pre- and post-shift line checks to ensure food quality, cleanliness, and readiness. Ensure compliance with DOH regulations and internal cleanliness policies. Oversee and organize staff meals, ensuring quality and timeliness. Lead BOH pre-shift meetings to communicate occupancy, cover counts, and priorities. Facilitate a smooth transition between services and maintain consistency throughout shifts. Monitor and report breakage or waste to maintain accurate cost tracking.

Skills and Qualifications:

Minimum 2 years of experience in a Sous Chef, Junior Sous Chef, or Kitchen Management position. Fine dining experience preferred. Highly organized with strong administrative skills. Experience with scheduling platforms, inventory systems, and HR documents. Detail-oriented with a self-directed work ethic and a growth mindset. Strong communication and leadership abilities. Knowledge of cooking methods, kitchen equipment, and BOH operations. Proficiency in MS Office and restaurant management software. Physical Aspects of the
