Planning the menu, keeping in mind budget, and availability of seasonal ingredients. Coordinating kitchen staff, and assisting them as required. Reviewing staffing levels to meet service, operational and financial objectives. Hiring and training kitchen staff, such as cooks, food preparation workers and dishwashers. Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders. Managing operations, orderings, and inventorying using POS & software programs. Practicing excellent food safety and sanitation practices and complying with HACCP standards. Working both saut and roasting stations. Cleaning and maintaining kitchen, cooking line and appliances according to ServSafe standards. Ensuring compliance with state, federal, and local food handling requirements and standards.
