QUALIFICATIONS
High school diploma and two years experience in commercial or institutional food service, preferably in school setting, or an equivalent combination of education and experience; ServSafe®
Certificate or NC Safe Plates Certificate Nature of Work :
The Manager supervises the cafeteria staff in food preparation, service and clean-up of breakfast, lunch and snacks in a cost-effective manner according to Federal, State & local guidelines and procedures. The Manager communicates effectively with staff, students, parents and administration to assure a positive atmosphere and image of the cafeteria and cafeteria staff.
Knowledge, Skills and Abilities :
Team player with excellent interpersonal and communication skills Considerable knowledge of food preparation and standards of sanitation & safety Skill in use of food preparation equipment Working knowledge of basic arithmetic Ability to comprehend/apply written & verbal guidelines/directions and explain them to others Ability to substitute for any cashier Ability to coordinate multiple tasks in fast-paced environment Must be service-oriented with ability to establish and maintain positive working relationships Strong management, organizational and communication skills
Duties and Responsibilities :
Schedules cafeteria staff work assignments (written) for food preparation, service and cleaning Follows planned menus of multiple entrées, variety of fruit and vegetable choices Observes food preparation and line service to assure quality standards and quantity controls Orders food & supplies weekly according to cafeteria requirements, submitting orders per specified schedule Verifies cost, quantity & quality of items received and submits accurate & timely monthly inventory reports Must be able to lift and/or move (25 pounds); be on feet for extended periods of time; work in cold temperatures: walk-in refrigerator (41°) and walk-in freezer (0°) Ensures proper storage of all items according to guidelines and rotates stock in timely manner Oversees equipment use; requests repairs for equipment / facilities as needed Follows HACCP guidelines & CDC rules for COVID to assure high standards of safety and sanitation Maintains and submits accurate computer time records according to schedule Provides on-the-job training in equipment use/care, food production & presentation, sanitation, safety, storage and recordkeeping Completes employee evaluations, documenting performance through reviews and/or conferences Participates in the interview process for cafeteria staff Complies with cash collection procedures; makes bank deposits according to specified procedures Maintains and submits accurate computer records of meal participation on a timely basis Perform other duties as assigned
