Full Job Description Job Title:

Food & Beverage Manager Reports to: Director of Food & Bev. The Food & Beverage Manager is responsible for managing and assisting with all operational activities of the restaurant, providing service levels in accordance with Forbes 5-Star standards. They must be able to communicate effectively, verbally and in writing, to provide clear direction to staff. The Food & Beverage Manager will achieve the desired outcomes through the creation, development and maintenance of a competent, motivated and empowered staff. Candidate will be responsible for selecting and interviewing staff members, training, supervising, evaluating, and administering progressive disciplinary procedures for staff, in order to ensure that the CHR&M high standards of quality are met.

  • The Food & Beverage Manager will assure guest service standards are being applied consistently to all Resort and departmental policies and that procedures are followed and adhered to.
  • Maintain department efficiency indicated by budget and forecasts.
  • Provide overall direction, coordination, and evaluation of the restaurant.
  • Maintain a high level of professional appearance, demeanor, and ethics in dealing with guests, co-workers, and subordinates.
  • Facilitate and schedule departmental meetings periodically to ensure all staff are informed.
  • Organize scheduling of the restaurant team according to business levels and needs.
  • Authorize payroll on a bi-weekly basis.
  • Monitor and control daily revenues and expenses, by ensuring procedures are followed and proper controls are in place.
  • Has a strong presence at the restaurant, as necessary, based upon business levels.
  • Assist the Executive Chef with menu design and concepts for the restaurant.
  • Conduct weekly associate reviews to ensure that FOH standards are met.
  • Implement monthly mystery shop program and necessary follow up to improve and monitor standards.
  • Organize weekly Preventive Maintenance Walk with GM and Director of Engineering.
  • Spot check compliance in regards to checklist and standards.
  • Implement Monthly Cleaning schedule.
  • Maintain an ‘A’ rating for DHEC for the restaurant.
  • Responsible for monthly inventory of China, Glassware, Silverware, Kitchen equipment, etc.
  • Maintain procedures to i) ensure the security and proper storage of food and beverage products, inventory controls, ii) replenish supplies, inventory, uniforms, etc., iii) minimize waste, iv) control labor expenses.
  • Ensure that weekly internal kitchen audits are completed to help ensure all equipment is in proper condition and clean.
  • Ensure that the restaurant facility is well maintained and kept clean in accordance with DHEC, OSHA and resort standards.
  • Generate promotions and marketing initiatives to increase sales and profitability.
  • Develop strong working relationships with other department managers and directors, in order to ensure communication and teamwork is at an optimum.
  • Drive positive reviews/ rankings on the different review platforms by implementing staff incentive programs, training and daily and monthly tracking
  • Conduct interviews and performs reference checks of potential new hires.
  • Organize and administer on-the-job training for new employees and monitors training programs for hotel school interns.
  • Participate in training classes set up by the CHR&M.
  • Perform any additional tasks or projects, as required.
  • Empower associates to provide excellent customer service.
  • Emphasize guest satisfaction during all departmental meetings and focuses on continuously improving.
  • Ensure associates understand expectations and parameters of the restaurant.
  • Solicit associate feedback, utilizes an “open door” policy, and reviews associate satisfaction results to identify and address associate problems or concerns A minimum of two years of Restaurant experience required in a property of similar size and quality is required.
NOTE:
