F&B Operations & Activation Manager Grand Hyatt Nashville – 3.3 Nashville, TN Job Details Full-time $60,000 – $65,000 a year 8 hours ago Qualifications Catering English Mid-level TIPS Microsoft Office High school diploma or GED Math Accounting POS Events management 1 year Leadership Full Job Description The F&B Operations & Activation Manager will oversee and support the evolving Food & Beverage operations beyond the hotel’s core outlets, including food trucks, offsite activations, pop-up experiences, and select catering events in and around Nashville Yards. Responsibilities Implement and maintain effective two-way communication systems which reach all parties (lawn management, vendors, hotel employees and owners. Be the point of contact for all other food truck vendors. Involved in the hiring and scheduling and resolving any issues. Informs customers about the available food, beverage and additional products in the Trucks and other venues and provides customers with information about the Nashville Yards. Maintains a neat and clean environment in the Food Trucks, and lawn area. Cleans equipment, displays, floors, etc. as per SOP for daily cleaning program. Dispose trash appropriately which may include recycling cans and bottles and empty all waste liquid nightly and clean. Straightens/refreshes/restocks merchandise and food displays to maintain a “fresh” look in the Food Trucks and other venues. Close and open Food Trucks and other venues on time with proper setup for the day and proper closing procedure for the evening. Completes all sales through the Clover system, processes transactions in accordance with established accounting procedures Plan, coordinate, and lead select offsite catering events at various locations within and around the Nashville Yards development. Maintain a security function which protects both the assets and the personal safety of employees and customers. Implement and maintain sales/Marketing programs to ensure profitably. Provide nighty recap of the day’s operations, sales revenues, attendance weather and any pertinent information Assists with managing inventory by monitoring stocks and working with management to place orders. Knows and complies with all company policies and procedures pertaining to this position and its duties. May occasionally need to use sharp work tools such as can openers and knives. Review daily/weekly sales forecast and check current inventories against projections. Check food truck refrigeration for temperature prior to stocking. Stock food truck with ice and prepared products. Check food truck for both propane and water supply and plumbing to ensure everything is in working order Drain Grey water as needed. Check food truck ventilation and hood system to ensure everything is in working order Stock paper products and garbage cans in appropriate location. Check Fryer Oil quality and clean and replace as necessary Check trucks are plugged into power if product is left in refrigeration Learn menus, recipes, preparation and presentation. Ensure that all food items are stored in proper containers and at proper storage and holding temperatures. When necessary, cook only sufficient food in advance to cover expected business volume and to maintain quality. Maintain the work area, including all counter tops, utensils, equipment and refrigeration in a clean and sanitary condition in accordance with state, county and company health regulation and work safety regulations. Initiate and communicate with various federal, state, county, and city officials and agencies for licensing, applications, permits and certifications. Serve as a VIP liaison for special events, ensuring discretion, professionalism, and personalized service of the highest standard. Mentor, develop, and inspire associates, fostering a high-performing, guest-centric team culture. Solve operational challenges creatively and collaboratively, always maintaining a solutions-oriented approach. Able to assist in outlets when weather or business demands Other duties as assigned. Experience High school diploma or equivalent education required Minimum 1-3 years of progressive Food & Beverage operations leadership experience, including experience in offsite catering, event activations, or mobile food operations Food Safety Certification and TIPS Training required Skills and Abilities Carry out instructions furnished in written, oral, or diagrammatic form. Deal with problems involving several variables. Ability to balance cash drawer and exercise math and basic accounting skills. Read and understand instructions, safety rules, etc. Write reports with proper format, punctuation, spelling, and grammar, using all parts of speech. Speak with poise, voice control, and confidence, using correct English and well-modulated voice. Transcribing, entering, or posting data; talking with and/or signaling people to convey or exchange information, including giving assignments and or directions to helpers or assistants. Must be able to “prep” food products, using standardized food preparation techniques. Skillfully use hand tools or machines needed for work. Measure, cut or otherwise work on materials or objects with great precision. Use arithmetic or shop geometry to figure amounts of material needed, dimensions to be followed and cost of materials. Read recipes of items to be prepared. Problem solving skills Change activity frequently and cope with interruptions Ordering products and services Manage the schedule Proficient with event management platforms, POS systems, Microsoft Office Suite, Clover and inventory management systems.
