Certified Dietary Manager Dietary Manager Responsibilities:
Plan, organize, and supervise the daily operations of the dietary department. Develop and implement menus that are balanced, appealing, and in compliance with dietary regulations and individual dietary requirements. Coordinate food purchasing, budgeting, and inventory management. Train, supervise, and evaluate dietary staff to ensure high standards of performance and service. Maintain cleanliness and sanitation standards in the kitchen and dining areas. Collaborate with healthcare professionals to address specific dietary needs of residents. Ensure compliance with state and federal regulations related to food safety and sanitation.
Dietary Manager Qualifications:
The Director of Food and Nutrition Services must, at a minimum, meet one of the following qualifications: (A) Certified Dietary Manager (CDM); or (B) Certified Food Service Manager (CFSM); or (C) Holds a similar national certification for food service management and safety from a recognized certifying body; or (D) Possesses an associate’s or higher degree in food service management or hospitality from an accredited institution of higher learning, with coursework in food service or restaurant management; or (E) Has a minimum of 2 years of experience as a Director of Food and Nutrition Services in a nursing facility setting, and has completed a course of study in food safety and management by no later than October 1, 2023. The course should cover essential topics integral to managing dietary operations, including foodborne illness, sanitation procedures, and food purchasing/receiving.
