DIETARY MANAGER
Full Time, Days Job Summary:

Interviews, trains, orientates, evaluates, recognizes and disciplines staff as needed. This includes providing day-to-day work direction and problem-solving as issues or conflicts arise.
Continuallymunicates expectations with staff.
Ensures staffplies with online education training.
Develop and maintain staffing and scheduling systems reflecting quality, cost, and appropriateness, based on workload, skills, availability of support services, infection control issues, and safety considerations.
Provides regular staff meetings, ongoing employee educational, and development opportunities, which meet regulatory requirements and increase knowledge.
Creates and maintains a work environment for employees that is conducive to high productivity and morale. Establish and maintain effectivemunication systems with employees.
Recognizes the importance of customer service, and strive each day to provide an exceptional experience for each person served.
Responsible foranizing and set up of day-to-day events and special functions held at Liberty’s Health Services dining departments.
Works closely with staff and family to ensure all catering needs are met.
Assist theanizer with menu planning.
Check food inventory, order food,anize and prepare food and present food in a professional manner.
Assist in planning and creating menu cycles. Responsible for bringing forth innovative ideas and trends to enhance the dining experience for residents and guests. Menu planning will include researching food cost, portion controls, food appearance, and taking into consideration resident/guest requests.
Ensures all meals are prepared, served, and stored as planned and consistent with the current federal, state and local standards governing nursing home/long term care and assisted living facilities.
Serves as a liaison between consultant dietitians and Nursing to ensure resident’s nutritional needs are met.
Oversees all trays are delivered on time, properly and accurately. The CDM follows and abides by the HIPAA (Health Insurance Portability and Accountability Act) privacy guidelines as administered by Liberty Senior Living.
Maintains and monitors inventory levels as established by departmental census/budgets. Orders food and supplies as needed.
Tracks invoices from vendors, checks orders for accuracy, and supervises proper storage of food and non-food items
Ensure stored items will have identifying labels and are dated based upon “first-in-first out” or FIFO.
Ensures proper temperatures and storage of raw and leftover foods; inspects and maintains the cleanliness of the refrigerated areas, storage rooms, utility rooms and other areas of the dining services department.
Ensures that dining staff personnel maintain habits of good personal hygiene and infection control procedures. In addition, he/she ensures that dining staff understands and follow Standard Precautions, established safety rules, fire and disaster policies and procedures, and cleanliness of all work areas in the kitchen.
Identifies and reports any equipment that is in need of repair to Maintenance and/or the Culinary and Nutrition Services Director.
Reviews, documents, and promptly resolves all residentplaints concerning the dining services department.

Job Requirements:

Requires a degree in related field or a Certified Dietary Manager (CDM) certificate, and a minimum of one year of experience cooking or supervising within a kitchen/culinary food service operation, preferably in a healthcare, or any equivalentbination of training, education and experience.
Completion of a state approved food safety course required.
Should possess good intervention techniques, excellentmunication skills with groups and individuals, problem solving and decision making capabilities, and the ability to solicit cooperation.
Must have knowledge of state and federal requirements regarding health inspections.
