Position Summary:

The AM Captain is responsible for leading and overseeing breakfast and lunch service operations at the resort’s signature dining venue, ensuring a seamless and elevated guest experience aligned with the luxury standards of our 24-cabin property. Reporting directly to the Assistant Director of Food & Beverage, the AM Captain plays a key leadership role in supervising daily front-of-house activities during morning and midday service periods. This position oversees the performance and development of breakfast and lunch attendants, fosters a culture of warm hospitality, and serves as the primary point of contact for guest inquiries related to the restaurant, including dinner reservations. The AM Captain ensures each guest receives attentive, personalized service while maintaining operational excellence, team morale, and dining room readiness

Essential Responsibilities:

Lead daily breakfast and lunch service team members, ensuring smooth operations and exceptional guest service. Supervise, support, and mentor breakfast and lunch attendants, providing on-the-job training and performance feedback. Serve as the primary contact for guest inquiries during AM hours, including questions about the restaurant, menus, and special requests. Manage and coordinate dinner reservations, communicating effectively with the PM team to ensure seamless guest transitions. Uphold service standards and maintain a polished, welcoming dining atmosphere. Collaborate with the Assistant Director of Food & Beverage on service procedures, staffing, and guest feedback. Monitor daily setup, cleanliness, and readiness of the dining room and service stations. Address and resolve guest concerns promptly, ensuring satisfaction and repeat visits. Collaborate in adjunction with PM Captain and Asst. Director of Food & Beverage in the creation of FOH SOPs Train & supervise AM service team members on current and new SOPs Collaborate with Assistant Director of Food & Beverage on wine lists and beverage training Greet guests during morning and afternoon service through the host stand Assist in the set up and execution of catered/special event meal & beverage services Maintain and record dinnerware inventory and breakage Maintain and record assigned FOH inventory numbers Maintain full knowledge of current food and beverage menus including the dinner menus. Be able to properly describe our wines, beers, and cocktails to guests including tasting notes Safely serve guests with allergy and dietary restrictions Maintain a clean and orderly dining room throughout all services Work with Toast to enter orders and deliver all food to our guests promptly and accurately with modifications Manage the set up and break down the dining room to house standards Exhibit comprehensive knowledge of the property, amenities and Piaule as a brand Be accommodating of a schedule that will consist of morning, afternoon, weekend and/or holiday shifts

Required Qualifications:

2-3 years of fine-dining restaurant or luxury hotel experience 1-2 years of supervisory experience Be able to lift up to 30 pounds Be able to spend long periods of time standing Knowledge of service industry and food and beverage environment Ability to work positively and professionally in a high-end establishment History of effective collaboration and communication in working with managers, bartenders, and culinary staff Punctuality, reliability and professionalism in all aspects of the role

Certifications, Licenses:

ServSafe, TIPS or equivalent certification

Required Skills:

Strong interpersonal skills; excellent verbal and written communication skills; ability to effectively work with multiple teams across the property to respond to business needs. Attention to detail in fine dining service Strong organizational skills.

Job Type:
Full-time Pay:

$22.00 – $25.00 per hour Expected hours: 40 per week
