Executive Chef/Food Service Director

- Primarily Monday-Friday 9:00 AM
- 5:30 PM some weekends and some holiday availability required.
Salary Range:
$60,000 To $80,000 Annually RPH is seeking an Executive Chef/Food Service Director to be responsible for the oversight and day-to-day culinary operations of our Memory Care Residences located at 256 Thurston Road, Rochester, 20 Crossing Creek Drive, Fairport and 48 Cottage Grove Circle, North Chili, New York. Learn more about what we do at www.rph.org Job Description The Executive Chef is responsible for successfully coordinating and directing all culinary functions and quality control/improvement within the department as assigned. The Executive Chef helps develop and maintain a culinary integrity program throughout the three communities. The position requires interaction, engagement, and coordination efforts with clinical dietitians and resident care staff to ensure optimal Resident care as well as co-development and promotion of wellness, educational and community initiatives. .
Responsibilities:
+ Supervise menu planning, supplies, overall meal preparation, meal presentation, table service, budgeting, and safety in the kitchen. + Ensure that all food is prepared in a timely fashion, utilizing batch cooking where appropriate to ensure fresh product. + Responsible for designing and training on preparation of food products in a manner to preserve nutrients toward meeting the specific dietary requirements of the residents and company standards. + Responsible for establishing the standard for quality of service, plate presentation, dining room cleanliness, and overall dining experience. + Provide knowledgeable oversight for all food production, including menu-planning, purchasing, cost control, and inventory. + Ensure the safety of the food in the community through compliance with all applicable company, local, state, and federal sanitation and food handling procedures and regulations. + Provide standards and guidance for safe food handling and storage procedures. + Monitor and adhere to food and beverage budget. + Maintain cleanliness and sanitation of equipment, food storage, and work areas. + Work with Sales and Marketing to assist with outreach efforts and special events at communities. + Assist with planning and standards for special resident dining events (themed dining, celebrations, resident satisfaction). Responsible for meeting all rules and regulations of a licensed Assisted Living community; relative to operation of the kitchen and dining room for all communities. + Responsible for all other duties deemed necessary to fulfill job requirements. + Travel among the three communities on a weekly basis Qualifications + Completion of an accredited culinary institution program or equivalent degree and a minimum of three to five years progressive experience in the general culinary or healthcare foodservice management field or an equivalent combination of education and work experience. + American Culinary Federation certification at the CEC level a plus. + Must have ServSafe certification. + Ability to work effectively in a diverse, collaborative, and team-oriented culture. + Excellent leadership, analytical, organizational, planning, delegation, coaching, communication (verbal, written and interpersonal), and computer (MS Word, Excel, Outlook) skills. + Experience in Senior Living or Healthcare a plus. + Must be able to read and understand English in order that menus and recipes are following in accordance with normal food preparation procedures.
