OVERVIEW
As Assistant Director of Food & Beverage Outlets, you will oversee the daily operations of the restaurant, bar, room service, and minibar departments while providing support to banquets. You will partner closely with culinary leadership and act as a key leader in the Food & Beverage division. Your goal is to maintain exceptional guest satisfaction, meet financial targets, and ensure that brand and regulatory standards are upheld across all outlets.
Duties and Responsibilities
Departmental Operations
Oversee daily operations of all food & beverage outlets, including restaurant, bar, room service, and minibar.
Provide support to Banquets and collaborate with the Director of Banquets.
Ensure compliance with health, safety, sanitation, and brand standards.
Manage scheduling and staffing strategies in coordination with business volume.
Financial Performance
Support the Director of Outlets in achieving budgeted revenues, control costs (labor, food, beverage), and forecast monthly financials.
Support preparation of annual budgets and operating plans.
Implement procedures to minimize waste, manage inventory, and optimize productivity.
Staff Leadership
Lead, coach, and develop outlet managers and line staff to meet quality and service standards.
Conduct regular performance reviews and take corrective action where needed.
Ensure staff is trained in service, safety, and compliance expectations.
Guest Experience
Address guest concerns promptly and professionally to ensure satisfaction.
Partner with Sales, Marketing, and Catering to execute memorable guest events and promotions.
Monitor guest feedback and continuously improve service delivery.
Operational Excellence
Establish inventory control procedures and ensure equipment is maintained.
Recruit and manage entertainment as appropriate for outlets/events.
Serve as Manager on Duty as needed and collaborate with other departments including Housekeeping, Engineering, and Front Office.
Requirements Bachelor’s degree in Hotel Management, Culinary Arts, or related field.
2-4 years of senior-level food & beverage management experience.
Strong working knowledge of luxury hospitality and large properties (500+ rooms).
Knowledgeable of New York City Collective Bargaining Agreements.
Ability to work a flexible schedule including nights, weekends, and holidays.

Annual Salary Range:
$85,000 – $90,000
