The Director of Food & Beverage offers an extraordinary opportunity to lead the pre-opening vision and execution of the Food & Beverage operation for Dolly Parton’s SongTeller Hotel featuring 245 rooms, two F&B Entertainment venues, a market, and Dolly Parton’s Museum. The Director of Food & Beverage will define the property’s beverage, culinary and hospitality identity, managing all front- and heart-of-house operations to deliver seamless, authentic, and memorable guest experiences. From concept creation and operational strategy to financial oversight and vendor collaboration, the Director of Food & Beverage will infuse passion, innovation, and meticulous attention to detail across every outlet. Summary of Essential Functions & Responsibilities Lead and direct the development and implementation of F&B vision and concepts, standard operating procedures, training programs, workflows and staffing plans in preparation for the property launch in Q1-2026. Manage Pre-Opening Critical Path process, ensuring milestones are achieved in a timely manner. Oversee the creation of distinctive food and beverage concepts that reflect Southern hospitality and the property brand. Partner with Executive Chef, beverage and entertainment teams to design menus that balance innovation with authenticity, appealing to diverse guest demographics. Recruit, interview and train, mentor, and inspire a high-performing F&B team that embodies a collaborative, inclusive culture. Lead and mentor F&B Leadership Team, meeting individually to ensure excellence in service, quality and guest and host satisfaction in all outlets. Manage all F&B outlets and service areas including event venues, in-room dining, market and banquets and catering operations. Drive a guest-centric experience that delivers memorable, personalized experiences aligned with the hotel’s unique brand. Empower the team to go above and beyond, respond to guest feedback with grace, and always find a way to add that extra sparkle Partner with the sales team to build and implement a site inspection process, which delivers an exciting and memorable visit for prospective clients. Attend and participate in the weekly hotel Revenue Strategy meeting. Prepare annual business plans and execute the plans as outlined, critically examining, and adjusting as deemed necessary by current market conditions. Ensure the team adheres to budget, forecast and purchasing guidelines. Oversee budgeting, forecasting, labor planning, food and beverage cost control, and vendor relationships to meet or exceed financial KPIs. Stay informed of industry trends, emerging food and beverage innovations, and guest preferences to keep offerings fresh and competitive including maintaining current knowledge of competitor’s programming and offerings. Collaborate with the marketing team to develop F&B programming, special events, and community engagement initiatives that attract and retain guests. Foster a culture of creativity and experimentation within the team. Oversee scheduling, shift planning, and day-to-day operations with precision and professionalism. Ensuring every detail—from grooming standards to closing checklist reflects excellence. Professionally represent Dolly Parton’s SongTeller Hotel by participating in industry events and local community functions. Utilize platforms such as Crunchtime, Microsoft Office, ProfitSword, Micros and other Hotel Systems to streamline scheduling, inventory, reporting and financial performance. Qualifications 10+ years of food & beverage management in upscale, lifestyle or luxury hotel setting. Opening hotel experience. Work background that reflects a successful track record of accomplishment and growth in hospitality F&B. Proven experience leading large-scale operations with multiple F&B outlets, banquets, and high-volume service. Proven leadership skills, problem solving, team building, communication and organizational skills. Extensive knowledge of spirits, craft cocktails, and mixology techniques Proficient knowledge of Microsoft Office, POS Systems to include Micros, Crunchtime or other food and beverage recipe, inventory management and ordering software, Hotel Effectiveness, Labor Management Tools and ProfitSword. A love for storytelling, beverage, food, live music, and events—a background in event venue management is a bonus. The ability to think outside the box using a fresh and innovative approach in all aspects of the position.

ServeSafe, Tips & ABC obtained within 60 days of employment. Strong communication and interpersonal skills. Flexibility to work evenings, weekends, and holidays as needed.
