Job Description:

Brine Room Operator (Production)

Summary:

The Brine Room Operator is responsible for preparing, monitoring, and maintaining brine solutions used in the food production process. This role ensures that brine mixtures are accurately prepared to meet production specifications and food safety standards. The operator must handle ingredients and equipment in a hygienic and efficient manner while complying with all regulatory and company requirements related to food safety, sanitation, and workplace safety.

Education:

 High school diploma or GED required; equivalent work experience may be considered in lieu of formal education. Experience /

Qualifications:

Knowledge of Good Manufacturing Practices (GMPs) and basic food safety standards (e.g., HACCP).
Strong attention to sanitation, hygiene, and cross-contamination controls. Ability to follow written instructions, batch sheets, and standard operating procedures (SOPs).
Comfortable working in cold, wet environments and able to lift up to 50 lbs.
Basic math and measurement skills; familiarity with operating pumps, mixers, and related equipment.

Duties and Responsibilities:

Food safety is the responsibility of every employee. Any issues should be brought to the immediate attention of area supervisor of manager 1. Must be able to follow mixing instructions. 2. All ingredients must be scanned. 3. Maintain inventory accuracy and FIFO. 4. Direct and manage personnel assisting Brine Operator position. 5. Must follow all GMP’s associated with this position. 6. Must be able to set-up, properly operate, read and monitor for accuracy scales and all testing equipment. 7. Communicate any mixing changes, problems, and mixing status of tanks in use at shift change. 8. Must be able to lift bags or containers weighing up to 50 lbs. or more. 9. Must be able to run equipment necessary- blender, tanks etc to run all product lines in the brine room. 10. Must be able to maintain a continuous and proper flow of brine. 11. Must be able to fill out all paperwork & documentation associated with this position neatly & accurately. 12. Must be conscientious about cleanliness. 13. Responsible for shutting line down and notifying proper people if an error is made or problems discovered. (QA Line tech Supervisor, Manager, next shift etc.) 14. Maintain a positive teamwork atmosphere by actions, communicating and helping co-workers. Must actively plan and act to set the next shift up for success, by cleaning and weighing or staging as appropriate. 15. Must know & understand all Critical Control Points for this position. 16. Must be able to follow current cleaning procedures. 17. Other Duties as assigned by supervisor.
