WHO WE ARE
The Salty is an artisan donut shop that focuses on chef-made, craft donuts that rotate based on seasonality. We’re a 100% scratch bakery, so we use nothing but the highest quality ingredients and making everything in house! THE JOB The Director of Pastry Innovation is responsible for leading the development, conceptualization, and execution of pastry products that align with The Salty strategy, market trends, and consumer demand. This role involves strategic planning, creative innovation, and cross-functional collaboration to deliver exceptional pastry products that drive sales growth and elevate the brand’s culinary profile.
RESPONSIBILITIES
Menu Innovation & Development Lead the R D and the development of new core, seasonal, and LTO menu items across donuts, baked goods, breakfast & lunch items, and more Champion creative ideation while balancing feasibility, kitchen complexity, and brand fit Stay ahead of culinary trends, regional flavors, and guest preferences to inform the innovation roadmap Build testing and iteration processes that are nimble, data-informed, and guest-centric Kitchen SOPs & Training Materials Develop clear, scalable SOPs, how-to guides, and training materials for each product and production method Partner with Operations to ensure flawless execution at store level Create quality assurance procedures, audits, and feedback loops to monitor consistency Quality, Execution & Feedback Loops Establish routines to check in with field teams, taste product in stores, and ensure real-time quality control Create processes for store-level feedback to influence product refinement and training needs Be a visible, credible presence in kitchens to reinforce standards and culture Continuous Training & Education Conduct scheduled, announced and also un-announced visits to stores, to assess culinary teams, product quality and conduct on-site training and spot-checking Responsible to spend (5) days a month on the road, visiting stores not in the positions home market and conducting ongoing training and culture building with culinary teams New Store Opening Support Responsible to be present during NSO’s for added support and training, as well as assessing a New Store’s readiness for Grand Opening Costing, Feasibility & Commercialization Partner with Ops and Supply Chain to cost and scale all new menu items Build pricing strategies that drive margin without compromising quality Evaluate kitchen equipment needs and operational capacity during development Collaboration & Communication Collaborate cross-functionally with Ops, Marketing, Supply Chain, and Store Development to align on product launches, timelines, and execution Present concepts and final products to internal teams, leadership, and sometimes external partners Serve as the internal voice of culinary excellence while protecting and evolving The Salty’s unique brand voice
QUALIFICATIONS & EXPERIENCE
- Bachelor’s degree in Culinary Arts, Food Science, or a related field.
- 8+ years of experience in culinary or menu innovation roles, with at least 3 years in a senior leadership or multi-unit capacity
- Strong creative vision with a passion for developing innovative, high-quality food products across multiple dayparts
- Deep knowledge of baking, pastry, and savory cooking techniques, ingredients, and production methods
- Proven track record of launching scalable menu items in a retail or QSR/café-style environment
- Experience building SOPs, training materials, and QA systems to support product consistency
- Strong understanding of food costing, sourcing, and pricing strategies
- Exceptional project management and organizational skills, with the ability to drive cross-functional initiatives from ideation to execution
- Excellent communication and leadership skills with the ability to build trust and inspire teams across departments and locations
- Comfortable working in a fast-paced, high-growth environment and willing to travel regularly to support training, innovation, and store execution
REQUIRED SKILLS & ABILITIES
- Strong written and verbal communication skills
- Ability to lead group training sessions and facilitate hands-on team development
- Highly detail-oriented, organized, and systems-minded
- Proficient with Microsoft Office Suite; familiarity with recipe costing software and kitchen production tools a plus
Physical Requirements:
- Full-time position with the ability to travel to various locations.
- Prolonged periods sitting at a desk and working on a computer.
- Must be able to lift up to 25 pounds at times.
