Job Overview:

The Director of Pastry Innovation is responsible for leading the creative development, planning, and execution of innovative pastry products that align with The Salty’s brand, market trends, and customer expectations. This leadership role blends culinary artistry with strategic business objectives, ensuring new and seasonal offerings drive brand growth and operational excellence across all locations.

Schedule and Shift:

Full-Time Monday – Friday Hours Range from 6:00 am – 6:00 pm

Primary Job Responsibilities:

Lead the concept, development, and execution of new and seasonal pastry items from ideation to launch. Conduct tastings and evaluate new or existing products for quality and consistency. Standardize recipes and ensure execution quality across locations. Research market trends and consumer preferences to inform product development. Collaborate with marketing, procurement, and operations teams to align innovation with brand strategy. Manage product testing, sensory evaluations, and cost analysis to ensure feasibility and profitability. Train and mentor pastry team members, create training materials, and monitor execution. Analyze production performance and implement corrective action plans when needed. Maintain awareness of culinary trends, ingredients, and industry innovations. Oversee pastry department budget and ensure cost-effective operations. Enforce food safety and sanitation compliance at all times.

Qualification:

Bachelor’s degree in Culinary Arts, Pastry Arts, or related field; advanced pastry certification preferred. Minimum 8 years of pastry development experience, including 3+ years in a leadership role. Demonstrated success in launching innovative pastry products. Strong culinary expertise, creativity, and a passion for trend-driven product development. Excellent organizational and project management skills. Strong leadership and communication skills with the ability to train and inspire teams. Skilled in data analysis, market research, and aligning culinary innovation with business strategy. Proficiency in Microsoft Office Suite; graphic design ability is a plus. Ability to work in a fast-paced, hands-on kitchen environment and travel as needed. Physically lift to 25 pounds and work on a computer for prolonged periods.
