The Salty is an artisan donut shop that focuses on chef-made, craft donuts that rotate based on seasonality. THE JOB The Director of Pastry Innovation is responsible for leading the development, conceptualization, and execution of pastry products that align with The Salty strategy, market trends, and consumer demand. This role involves strategic planning, creative innovation, and cross-functional collaboration to deliver exceptional pastry products that drive sales growth and elevate the brand’s culinary profile.

Key Responsibilities:
  • Lead the ideation, development, and execution of innovative pastry concepts from concept to commercialization on a scheduled basis for varying markets and product launches.
  • Conduct tastings for new product creations and improvements for current products.
  • Create standardized recipes and execution of recipes to ensure products are being produced to standard.
  • Research and analyze industry trends, market data, and consumer preferences to identify opportunities for new pastry products and seasonal offerings in varying markets.
  • Collaborate with cross-functional teams, including marketing, procurement, and operations, to align pastry innovation with brand positioning and business objectives.
  • Develop and conduct tastings of new pastry recipes, ensuring consistency in taste, quality, and presentation.
  • Oversee product testing, sensory evaluations, and cost analysis to ensure product viability and profitability.
  • Lead the training and development of pastry team members, fostering a culture of creativity and excellence. Create and update training documents for all BOH positions, follow up on training and ensure it is being executed properly
  • Analyze and address when production does not meet the scheduled expectation and create and execute action plans to correct.
  • Stay informed about emerging culinary techniques, ingredients, and industry trends to continuously inspire and innovate.
  • Manage the pastry department budget, ensuring cost control while maintaining product quality.
  • Maintain strict adherence to food safety and sanitation standards in all pastry operations.
Qualifications and Experience:
  • Bachelor’s degree in Culinary Arts, Pastry Arts, or a related field. Advanced degree or certification in pastry arts preferred.
  • 8+ years of experience in pastry product development, with at least 3 years in a leadership or management role.
  • Strong creative vision with a passion for developing innovative pastry products.
  • Excellent knowledge of culinary techniques, ingredients, and baking processes.
  • Proven track record of successful product launches and culinary innovation.
  • Exceptional organizational and project management skills.
  • Strong leadership and communication skills with the ability to inspire and lead.
  • Proficiency in data analysis and market research to inform product development strategies.
  • Ability to work in a fast- paced, high- pressure kitchen environment.
Required Skills/Abilities:
  • Excellent verbal and written communication skills with strong graphic design ability.
  • Thorough understanding of training processes.
  • Ability to moderate large groups.
  • Extremely organized and detail-oriented.
  • Proficient with Microsoft Office Suite or related software.
Physical Requirements:
  • Full-time position with the ability to travel to various locations.
  • Prolonged periods sitting at a desk and working on a computer.
  • Must be able to lift up to 25 pounds at times.
